Nutrition
Ounce for ounce, kiwifruits packs more nutritional benefits than any other fruit. It is the most nutrient dense of the 27 commonly sonsumed fruits. It has twice the Vitamin C of an orange, plus magnesium. It is a food low-fat source of potassium and Vitamin E and is an excellent source of fiber. Low in sodium, kiwifruit contains only 45 to 50 calories per average sized fruit.
Ripening
Unripe Kiwifruits can be ripened in anywhere from two to ten days, depending on the hardness of the fruits. Put the fruits in a bag along with apples or bananas, both of which give off ethylene gas which will ripen the kiwifruits. Any type of bag will do as long as the ethylene gas remains trapped int he bag. Keep at room temperature until kiwi is slightly soft. A knife should easily pass through the fruit. Keep in mind that most kiwi is sold hard, or unripe.
Storage
Unripe kiwifruit can be stored for months as long as it is kept cold and away from other fruit, or source of ethylene. Store as close to 32f as possible, but not below freezing. Same rule for ripe kiwifruit which will last for a few weeks refrigerated.
Kiwifruits flavor
All kiwifruit fo not taste the same. Why are some full-flavored and sweet, while others are sour or bland? Contrary to popular opinion, it is not sue to the color, shape or size, the kiwifruit being picked too early or being stored for too long, although those factores also may play a part in the taste. According to a recent study at the UC Davis, analyzing kiwifruit for consumer taste acceptance, it was found that kiwifruit low in acid content was wated highest or best tasting. Most kiwifruit contains relatively high amount of acid, thus giving it a tart taste. Kiwifruit grown in areas where the soil is very low in acid content are less acidic and therefore have a sweeter taste.
One of the areas like this is our Mallard Lake Ranch, on the Nipomo Mesa, just north of Santa Maria, which has sandy soil with low asid content.
We do not use persticides or herbicides on or near the kiwifruit.
