Ingredients:

  • 12-15 organic sweet mini peppers
  • 1/2 pound organic sausage (you can use chicken, turkey, or plant-based sausage for a healthier option)

  • 1/2 cup organic black beans, drained and rinsed

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the sweet mini peppers, cut off the tops, and remove the seeds and membranes. Set them aside.
  3. In a large skillet, heat the olive oil over medium heat. If you’re using plant-based sausage, you can skip this step since it doesn’t require cooking.
  4. If you’re using animal-based sausage, remove the sausage from its casing and cook it in the skillet, breaking it apart into crumbles with a spatula as it cooks. Cook until it’s browned and cooked through. Drain any excess fat.
  5. In a large mixing bowl, combine the cooked sausage (or plant-based sausage), cooked quinoa, black beans, diced tomatoes, corn, shredded cheese, chili powder, cumin, salt, and pepper. Mix everything together until well combined.
  6. Stuff each sweet mini pepper with the sausage and quinoa mixture. Press the mixture down gently to pack it in.
  7. Place the stuffed peppers on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for about 15-20 minutes or until the peppers are tender and the filling is heated through.
  9. If desired, garnish with fresh organic cilantro before serving.
